1 lb sweet Italian sausage
1 lb hot Italian sausage
3 tbsp olive oil |
Cut sausages into 1/2 inch pieces. Heat olive oil in a large pot and add sausage pieces. Cook, stirring occasionally until sausage is browned. |
1 medium onion
2 garlic cloves or 2 tsp minced |
Mince garlic and chop onion. Add to pot and cook for 5 minutes |
4 celery stalks, chopped
2 green peppers,
1 red pepper |
Chop celery and peppers. Add to pot and cook for another 5 mins. |
2 28-oz cans plum tomatoes
2 tsp each; basil, oregano rosemary and thyme salt and pepper
1/2 cup minced parsley
1/2 cup dry red wine (optional) |
Add all but 1/4 cup parsley to pot. Simmer uncovered, stirring occasionally for 20 minutes. Sprinkle with remaining parsley. |
